Notes

Why did my sauce break?
Likely pre-shredded cheese added over direct heat. Use fresh block cheese, off heat, added gradually in small handfuls.
Can I use half-and-half?
Yes, for a lighter sauce, though it won't thicken as much as heavy cream on its own.
Storage: Refrigerate leftovers within 2 hours of cooking, or within 1 hour if room temperature is above 90°F (32°C). Store at 40°F (4°C) or below and use within 3–4 days.
Reheating: Reheat gently on the stovetop or in the microwave, stirring as needed, until the chicken and sauce reach 165°F (74°C) internally. Add a small splash of milk or cream if the sauce becomes too thick.
Chicken safety: Cooking time can vary depending on the thickness of the chicken. Use an instant-read thermometer and make sure the thickest part of the chicken reaches 165°F (74°C) before serving. Do not rely on cooking time, color, or clear juices alone.
 Scaling up for a crowd?
Watch the sauce visually rather than fixed timing larger volumes of cream take a little longer to reduce properly.
