Notes

Can I use chicken breast?
Yes, but adjust the cooking time as needed and use an instant-read thermometer. The thickest piece should reach 165°F (74°C) before serving.
Stew too thin?
Make sure the roux cooked fully before adding stock; a cornstarch slurry can be stirred in as a last-minute fix.
Storage?
Refrigerate leftovers within 2 hours, or within 1 hour if the room temperature is above 90°F (32°C). Store at 40°F (4°C) or below and use within 3 to 4 days. Freezes best without the potatoes.
Reheat?
Reheat on the stovetop or in the microwave until the chicken and stew reach 165°F (74°C) internally. Add a splash of stock or water if needed.
Slow cooker version?
Sear the chicken and make the roux on the stovetop first, then transfer to a slow cooker on low for 6 hours, adding potatoes for the final 2 hours. Use an instant-read thermometer to confirm the chicken reaches 165°F (74°C) before serving.
