Prep
- Trim and Dry Trim large excess fat deposits from underside of each thigh leave skin intact. Pat every surface completely dry with paper towels. Thorough drying is the foundation of crispy skin wet skin steams rather than crisps.

- Apply Keto Dry Rub Combine all dry rub ingredients in small bowl. Add avocado oil to chicken thighs and rub all surfaces. Apply dry rub evenly over all surfaces including under skin for direct flavor on the meat. Total dry rub net carbs: approximately 0.8g per serving.

- Preheat Air Fryer Preheat to 380°F for 3 to 5 minutes. Preheating starts fat rendering immediately on contact.

Two-Temperature Cook
- First Round (Fat Rendering) Place thighs skin side down in single layer. Air fry at 380°F for 12 minutes. Lower temperature renders fat slowly producing juicier meat and better fat-to-protein ratio in the finished dish. Flip each thigh skin side up.

- Second Round (Crispy Finish) Increase to 400°F. Air fry 8 to 10 minutes until internal temperature reads 165°F at thickest part away from bone per USDA safe minimum cooking temperatures. Skin should be deep golden and firm. Check at 8 minutes.

Rest
- Rest and Serve Rest 5 minutes on plate or wire rack. Skin firms further during rest. Serve with keto-friendly dipping sauce ranch (1g net carbs), blue cheese (1g), or Frank's RedHot buffalo (0g).

Notes
Net carbs per serving: 0.8g
From the dry rub only chicken itself is 0g carbs. Calculated from individual measured spices. Total batch net carbs: 3.2g across 4 thighs.
Store-bought spice blends?
Check labels carefully many contain maltodextrin, sugar, or corn starch as fillers. These add hidden carbs. Making dry rub from individual spices gives complete control and accurate tracking.
Keto sweetener optional?
Yes skip entirely for slightly lighter skin color. Allulose is the best substitute as it caramelizes similarly to sugar without any metabolic carb impact.
Boneless thighs?
Reduce cook time first round 8 minutes at 380°F, second round 6 to 8 minutes at 400°F. Slightly less keto-optimal due to lower fat content but still an excellent low-carb choice.
Meal prep?
Cook to 165°F as always. Store in glass containers in the fridge up to 5 days. Reheat in air fryer at 375°F for 5 to 6 minutes skin comes back genuinely crispy.
