Notes

Filling keeps leaking?
Three causes: filling too wet (squeeze spinach dry), too much filling (max 3 tbsp.), pocket cut too wide. Cream cheese base dramatically reduces leaking vs shredded cheese.
Make ahead?
Stuff and refrigerate up to 4 hours before cooking. Add 2 to 3 minutes to bake time when cooking from cold.
Freeze before cooking?
Freeze stuffed breasts on a sheet until solid then bag. Cook from frozen at 375°F for 35 to 40 minutes. Skip sear step when cooking from frozen.
Filling variations?
Sun-dried tomatoes, roasted peppers, fresh basil, mushrooms, bacon all work mixed into the cream cheese base. Keep total filling at 2 to 3 tablespoons per breast regardless of variation.
Reheat?
Oven at 325°F covered with foil for 12 to 15 minutes. Avoid air fryer cream cheese filling can overheat and separate.
