Method

Dry Brine (Night Before)
  1. Dry Brine Remove giblets. Pat chicken completely dry inside cavity and all external surfaces. Mix baking powder and salt. Apply evenly over all external surfaces. Place breast-side up on wire rack over rimmed baking sheet. Refrigerate uncovered 4 hours minimum overnight strongly recommended. This produces significantly crispier skin through moisture removal and Maillard reaction acceleration.

  2. Apply Butter and Fill Cavity Keep the chicken refrigerated until you are ready to prepare it. Separate the skin from the breast and thigh meat with your fingers. Apply half the compound butter under the skin and the remaining half over the exterior. Fill the cavity loosely with the lemon, thyme, rosemary, and smashed garlic. These are aromatics, not stuffing. Do not pack the cavity tightly.

  5. Roast Preheat oven to 425°F. Roast based on weight: 4 to 4.5 lbs = approximately 75 to 90 minutes Baste once at the halfway point if desired. Stop basting during the final 25 minutes to help the skin crisp. Do not rely on time alone. Check the chicken with an instant-read thermometer. The thickest part of the thigh and breast should reach 165°F (74°C).

Notes

Overnight dry brine?
Strongly recommended. The difference in skin crispiness between 4-hour and overnight dry brining is significant and consistent. Plan the day before for best results.
Breast browning too fast?
Tent loosely with foil over the breast only. Remove foil for final 15 minutes to allow skin to crisp.
Serving size?
Plan 1 to 1.25 lbs whole chicken per person bone and carcass reduce meat yield to approximately 40 to 50% of whole weight.
Leftover ideas?
Refrigerate leftover chicken and gravy within 2 hours. Store at 40°F (4°C) or below and use within 3 to 4 days. Reheat leftovers to 165°F (74°C) before serving.
 Two chickens for larger gathering?
Two 3.5 lb chickens serve 6 to 8 people and roast more evenly than one large bird. Use two separate pans or one very large roasting pan.
