Notes

Glaze too thin? Simmer 2 more minutes after removing chicken OR add 1 tsp cornstarch mixed with 1 tbsp cold water to simmering glaze. Stir and thickens in 30 seconds. Most reliable fix.
Best apple choice?
Honeycrisp or Granny Smith both hold their shape during cooking. Fuji and Gala soften quickly and can disappear into the glaze.
Slow cooker?
Place shallots and apples in base. Season and add chicken skin-side up. Pour glaze mixture over. Cook low 5 to 6 hours. Broil skin 3 to 4 minutes for crispiness. Reduce cooking liquid separately.
 Boneless thighs?
Reduce oven time to 15 minutes. Check at 12 minutes. Still excellent just less rich from the rendered skin.
Storage?
Fridge 4 days. Reheat at 325°F covered. Freeze chicken without apple wedges they turn mushy when frozen.
