Notes

Why did my coating go soggy?
Sauce poured directly over the chicken, or resting on paper towels instead of a wire rack. Fix either for a crispier result.
Can I use curry roux blocks?
Yes, melt 2 to 3 cubes into the stock in place of the flour and curry powder steps.
Storage: Refrigerate leftover chicken and curry sauce within 2 hours of cooking, or within 1 hour if room temperature is above 90°F (32°C). Store at 40°F (4°C) or below and use within 3–4 days. Keep the chicken and sauce separate for better texture.
Reheat: Reheat the chicken in an oven or air fryer until the thickest part reaches 165°F (74°C) internally. Reheat curry sauce gently until hot throughout. If reheating chicken together with the sauce, make sure the chicken reaches 165°F (74°C).
Baking instead of frying: Bake at 200°C (400°F) until the thickest part of the chicken reaches 165°F (74°C). The listed 20–25 minutes is an estimate and should not replace checking the internal temperature.
