  2. Marinate the Chicken Place chicken in zip-lock bag. Pour marinade over and turn to coat. Press out air. Refrigerate based on cut: breast 1 to 2 hours, boneless thighs 2 to 4 hours, bone-in thighs 4 to 8 hours. Flip halfway through.

Prep and Grill

Sauce (Optional)

Notes

 Freezer method (biggest time saver): Add raw chicken and marinade to a zip-lock bag and freeze immediately. Chicken marinates as it thaws in the fridge overnight. Ready to grill with zero extra prep. Works best for bone-in thighs, drumsticks, and wings.
Marinating too long? Chicken breast in this marinade should not exceed 4 hours. The acid starts to break down surface proteins past that point and the exterior texture suffers. Bone-in pieces and thighs tolerate up to 12 hours.
Not browning well on grill? Pat more firmly dry before grilling. Surface moisture is the most common cause of steaming rather than searing.
 Yogurt version for long marinating: Replace lemon juice with 2 tbsp plain whole-milk yogurt. Reduce soy sauce to 1 tbsp. Can marinate up to 24 hours without texture issues.
 Gluten-free? Replace soy sauce with coconut aminos (same amount) or tamari. All other ingredients are naturally gluten-free.
